Beef Tips

Ingredients
Your preferred cut of steak, enough for the amount of people you’re serving, here I used some nice lean cuts of top sirloin.
salt and fresh ground pepper, to taste
few tbsp olive or vegetable oil, divided
few tbsp butter, divided
1 large shallot (or half a white onion), minced
1 tsp minced garlic
3 c beef broth
1/4 c Worcestershire sauce
1/4 c soy sauce
1 tsp dried thyme
1 tsp smoked paprika
3 tbsp cornstarch
1/3 c water
1 sprinkle fresh parsley, optional

Instructions

1. Season beef with salt and pepper to taste and cut into approx 1-2″ square cubes.

2. In large skillet, heat 1 tbsp oil, plus 1 tbsp butter, over medium high heat. Add about half of the beef cubes and sear until browned on both sides. Remove to a bowl and set aside. Add another tbsp oil and butter and repeat with remaining beef cubes. Remove to bowl and set aside.

3. Reduce heat to medium and add remaining tbsp of oil and butter to skillet. Add chopped shallot (or onion) and saute for a couple minutes until softened and fragrant. Add in minced garlic and stir to cook for about a minute.

4. Return beef cubes to skillet and add beef broth, Worcestershire and soy sauces, thyme and paprika. Stir to blend. Bring mixture to a boil, then reduce heat to low. Cover skillet and let simmer until flavors blend and meat is tender (1-2 hrs).

5. In small bowl, mix cornstarch with cold water until smooth. Gradually stir into mixture with beef and gravy to thicken. Allow gravy to simmer another 10 minutes, stirring occasionally til thickens to your preference. Taste and adjust seasonings to your preference.

Serving suggestions – Serve beef tips and gravy over mashed potatoes, egg noodles or rice, with your favorite vegetable. Garish with fresh parsley if desired.
