BLT Sandwich with Balsamic Mayo
Man, I love a good BLT. Some perfectly cooked crispy bacon, farm fresh tomatoes, crunchy green leaf lettuce on sourdough toast…with or without sliced avocado and regular mayo or even better, mayo with a tinge of balsamic reduction and fresh ground pepper…with chips and a Claussen pickle…Mmm, hits the spot, always!
Here’s how we do ours…

Ingredients
- Sourdough bread
- Good flavorful tomatoes of your choice. For this, I prefer large tomatoes, sliced medium thickness.
- Green leaf lettuce leaves, prewashed and packaged is easiest.
- Bacon, cooked crispy but not too crispy. Not floppy.
- Mayo – couple of spoonfuls, enough to feed your crew.
- Balsamic reduction of your choice – just a splash to mix in your mayo. Top that off with a couple grinds of fresh cracked black pepper.
Instructions & Serving Suggestions
- I prefer our bread toasted, usually.
- Cook bacon and set aside on plate.
- Slice tomatoes and set out lettuce on separate plates so folks can make their own.
- You can serve with regular mayo or try balsamic-mayo, its so good – just mix a splash of balsamic reduction into your bowl with a couple spoonfuls of mayo and top with a couple grinds of fresh cracked black pepper.
- I love this with regular potato chips and a Claussen pickle slice. Perfection.
