
Crockpot Cheesey Potatoes
What an easy, filling, delicious meal this was for us on a cold night! You’ll use a slow cooker set to high for 2-3 hours and its done!
Ingredients
1 bag of diced hashbrown potatoes (if you can find them with the onions/peppers diced veggies added in, grab those – if not, just buy a bag of frozen onion/diced red and green peppers and shake some of those into the crockpot, along with the frozen potatoes).
1 can Campbells Cream of Potato (or you could use Cream of Mushroom) soup
8 oz sour cream
couple shakes of garlic powder (maybe a tsp or so)
salt and pepper to taste
1 package smoked beef sausage (you can use beef or polska or turkey sausage if you like), sliced into bite sized pieces
1 1/2 c shredded cheddar (I shredded my own, and prefer Tillamook Sharp for this recipe)
Instructions
1. Dump bag of diced potatoes into slow cooker, then top with soup, sour cream, garlic powder, salt and pepper. Mix to combine.
2. Cover slow cooker and set to high for 2-3 hours.
3. Add in your smoked sausage and mix in half the cheese, then sprinkle the rest on top. Cover and cook for additional 30 minutes or so, til cheese is melted. Mine melted and then just hung out on the warm setting for about an hour while we fed horses/cows rounded up kittens for the night – very forgiving recipe!
I served with oven roasted broccoli, cauli and carrots (just drizzle veggies with olive oil, salt and pepper and roast in 400 degree oven for about 15 minutes). As with just about everything that goes in the oven, I line my roasting pan with parchment for easier cleanup!
