Mini Meatloaves

Ingredients

  • Ground beef – I used one pound for 4 mini loaves
  • A small handful of pre-diced onion and green pepper
  • A few shakes (maybe 1/4 cup) of herb flavored breadcrumbs, you can also use plain or Panko
  • Few generous squirts of ketchup, and more added to the top of the meatloaves before putting them in the oven.
  • Salt & pepper to taste, you can also toss in some Italian seasoning if you wish

Instructions & Serving Suggestions

  • In a large mixing bowl, blend your ground beef with onions and green peppers, breadcrumbs, ketchup and seasonings.
  • Form into 3-4 hand-sized patties (I make them pretty flat for even cooking) and add to a prepared pan with sides (I line the pan with foil for easy cleanup and put a cookie-cooling rack on the top, spraying it with non-stick cooking spray first before adding the patties to it).
  • Put the patties into a 350 degree oven and bake for 35 minutes.
  • Serve with mashed potatoes (link to instructions on how I do em, here) and your veggie of choice.
